Cobleskill is a town in Schoharie County, New York, United States, with a population of approximately 7,000. It was first settled in 1752 and incorporated in 1823. The town is named after the Cobleskill Creek, a tributary that runs through it. Cobleskill is home to the State University of New York at Cobleskill, which was founded in 1916 as a school for agriculture and home economics. A notable landmark in Cobleskill is the historic Cobleskill Stone Church, built in 1834, which is a prominent example of Greek Revival architecture.
